In a medium-sized pot, add Roza's Chicken Bone Broth, spring onion whites and sliced ginger. Bring to a slow simmer to infuse the flavours of onion and ginger for 10-20 minutes depending on the strength of ginger you like.
Add mushrooms and bok choy to the broth three minutes before serving to soften slightly.
Remove the broth from the heat, season with salt to taste.
Transfer the broth and vegetables to a serving bowl, garnish with spring onion greens and enjoy!
