Chickpea Tuna Sandwich
Roza’s Gourmet Vegan Mayonnaise
apple cider vinegar
Drain chickpeas (don’t rinse) and mash with a fork (this can take a while, but is important to get them all shredded).
Put nori in a nutri-bullet or similar and blend to a rough powder.
Add this to the mixture with diced celery, sliced spring onion, apple cider vinegar and salt.
Mix well, then add Roza’s Gourmet Vegan Mayonnaise and stir through.
Add this mixture to a sandwich with your choice of fillings such as watercress, lettuce and/or sweet corn.
Add a little extra Roza’s Gourmet Vegan Mayonnaise if desired.
