Ingredients
  • 2 fillets salmonskin off
  • 2tbsp Roza’s Gourmet Mango Chilli & Coconut Chutney
  • 2 small zucchinischopped
  • 1 red capsicumchopped
  • 1/2 red onionsliced
  • 1 small sweet potatodiced into small cubes
  • 1tbsp extra virgin olive oil + extra
  • 1tbsp Fresh parsleychopped
  • Good quality salt and pepper
Instructions
  1. Pre-heat oven to 180°C.
  2. In a mixing bowl toss vegetables with olive oil and a pinch of salt and pepper.
  3. Spread vegetables onto an oven tray and roast for 30 minutes or until tender.
  4. After 20 minutes of vegetables roasting, make space amongst vegetables and add salmon to tray.
  5. Cook in oven for 8-10 minutes or until salmon is cooked to liking.
