Prawn and Mango Salad with Coconut Chilli Mayonnaise

  • 3cups leafy salad greens
  • 2 small cucumberssliced
  • 1 avocadosliced
  • 1 large mangosliced
  • 12 large cooked prawnspeeled (tails intact)
  • 1/2cup fresh corianderroughly chopped
  • 1 long red chillideseeded, finely sliced
  • 4tbsp Roza’s Gourmet Coconut Chilli Mayonnaiseextra to liking
  1. Layer salad greens, cucumbers and avocado onto a serving platter.
  2. Dollop Roza’s Gourmet Coconut Chilli Mayonnaise over salad.
  3. Top with mango slices, prawns, coriander and chilli.
  4. Add additional mayonnaise to your liking.
