Sweet Mustard Chicken

Ingredients
  • 4 large free-range chicken thighs
  • 4tbsp Roza’s Gourmet Sweet Mustard with Apricots & Macadamia Nuts
  • 2 carrotshalved lengthways
  • 2 broccolini bunches
  • 1/4 cauliflowercut into florets
  • extra virgin olive oil
  • Good quality salt and pepper
  • Fresh parsleychopped to serve
Instructions
  1. Pre-heat oven at 180°C.
  2. In a mixing bowl coat chicken thighs in sweet mustard sauce.
  3. On a large lined baking tray arrange carrots, broccolini and cauliflower florets at
  4. each end, leaving space in the middle for the chicken.
  5. Drizzle vegetables with a generous amount of olive oil and season with salt and pepper.
  6. Place chicken in the centre of the tray.
  7. Bake in oven for 30 minutes or until chicken is cooked through.
  8. Sprinkle chicken with fresh parsley and serve.
