Thai Pesto Noodle Ramen

Ingredients
  • 90g Soba Noodles
  • ½jar Roza’s Gourmet Thai Pesto
  • 1cup soy milk
  • 1tbs white miso paste
  • 1tbs mirin
  • 1clove garlic
  • 1inch ginger
  • 150g firm tofu
  • 3tbs tamari
  • 1tsp rapadura sugar
  • 1 bunch bok choy
Instructions
  1. Cut tofu into cubes and fry with 2 tbs tamari and the rapadura sugar. Once browned, remove from pan, then add bok choy and fry until wilted.
  2. In a pan, fry ginger and garlic gently, add mirin, tamari, white miso paste and finally the soy milk, then whisk together.
  3. Bring to very gentle simmer then set aside.
  4. Cook soba noodles to instructions then drain and mix with Roza’s Gourmet Thai Pesto.
  5. Add noodles to your bowl and pour over ramen soup, then finish with tofu and greens.
