Combine all ingredients, except the mayonnaise in a large bowl and toss gently, coating with a small amount of olive oil for shine and flavour, then set aside.
Spread a layer of Coconut Chilli Mayonnaise on the bottom of a large platter in an uneven and rustic style.
Using your hands, pile generous portions of the salad onto the center of the platter.
Garnish with fresh herbs, extra mayonnaise, citrus, nuts and seeds.
Serve with large spoons, scooping salad and mayonnaise onto plates for friends and family, allowing them to mix the salad and the sauce in their preferred quantities.
