Prawn and Mango Salad with Coconut Chilli Mayonnaise

  • 3 cups leafy salad greens
  • 2 small cucumbers sliced
  • 1 avocado sliced
  • 1 large mango sliced
  • 12 large cooked prawns peeled (tails intact)
  • 1/2 cup fresh coriander roughly chopped
  • 1 long red chilli deseeded, finely sliced
  • 4 tbsp Roza’s Gourmet Coconut Chilli Mayonnaise extra to liking

  • 1 large mango sliced

  • 1/2 cup fresh coriander roughly chopped
  • 1 long red chilli deseeded, finely sliced
  • 4 tbsp Roza’s Gourmet Coconut Chilli Mayonnaise extra to liking

Instructions
  1. Layer salad greens, cucumbers and avocado onto a serving platter.
  2. Dollop Roza’s Gourmet Coconut Chilli Mayonnaise over salad.
  3. Top with mango slices, prawns, coriander and chilli.
  4. Add additional mayonnaise to your liking.
