Halloumi, Cucumber & Mango Chutney Sandwich

  • 1 tbsp Roza's Mango Chilli & Coconut Chutney
  • 1 Lebanese Cucumber
  • 2 thickly cut slices of sourdough
  • 1/2 block halloumi (approx 6 slices)
  • salt & pepper

  • 1 tbsp Roza's Mango Chilli & Coconut Chutney
  • 1 Lebanese Cucumber
  • 2 thickly cut slices of sourdough
  • 1/2 block halloumi (approx 6 slices)
  • salt & pepper
Instructions
  1. With a vegetable peeler, shave lengths of cucumber from four sides, discarding the seed core
  2. In a non-stick frypan on med-high, grill halloumi slices until brown on both sides
  3. Assemble the sandwich with chutney, cucumber, salt and pepper, and halloumi
  4. Enjoy!
Recipe Notes
This sandwich is also fantastic when toasted - adding the cucumber after grilling.
